Hamburger buns

The recipe is so good, and the buns are so delicious, that I now always make a double batch of dough. Because they disappear faster than you can get your fill of them 🙂
12 rolls
Dough:
315 grams wheat flour
2 teaspoons dry yeast
300 ml milk, room temperature
Main dough:
230 grams wheat flour
1 1/2 teaspoons salt
3 tablespoons sugar
1 egg yolk
60 ml warm melted butter
Additionally:
2 tablespoons sesame seeds
1 egg
2 tablespoons milk

1) Prepare the dough: mix milk, yeast, and flour in a large bowl. Knead thoroughly, cover the bowl with a slightly damp kitchen towel, and leave at room temperature for 1 hour.

2) After the specified time has elapsed, prepare the main dough.

Add flour, salt, and sugar to the dough. Lightly beat the egg yolk with melted butter and add to the dough.

Knead the dough thoroughly, either by hand for 8-10 minutes or with a planetary mixer on medium speed for 3-4 minutes. The dough should be soft and elastic.

3) Cover the dough with a slightly damp kitchen towel and leave for 1.5-2 hours. The dough should double in volume.
4) Divide the dough into 12 pieces, cover with a slightly damp towel, and leave for another 20 minutes.

5) After the specified time has elapsed, form rolls from each piece of dough, wrapping the edges inward, under the roll, this will ensure that your balls are neat and tidy.

6) Place the rolls on a baking sheet lined with parchment paper or a silicone baking mat. Press the rolls lightly to flatten them slightly.

Cover with a slightly damp towel and leave for 1 hour and 30 minutes at room temperature in a draft-free place.
7) Preheat the oven to 200°C 1 hour before baking. It is important that it is thoroughly heated before you put the baking tray with the buns in.
8) Before baking the buns, beat the egg with the milk and use a pastry brush to coat the surface of the buns, immediately sprinkling sesame seeds on top.

9) Place the baking tray with the rolls in a well-heated oven and bake for 15-18 minutes. The rolls should rise and brown.
10) Remove the rolls from the oven and cool for at least 15 minutes before serving, preferably on a wire rack.
